Put the flour and cinnamon into a mixing bowl. Add the eggs; then gradually add the milk and oil and whisk well until a smooth paste forms. Leave to rest for 30 minutes before incorporating the raisins.
Heat a lightly oiled non-stick frying pan. Pour a little slick of the paste (3 tablespoons roughly). Cook on both sides for about 2-3 minutes until golden.
You can replace the raisins with small dried fruits (blueberries, cherries...).
